Tomato Chutney 

​Chutney is a condiment mostly a native of South Indian cuisine. It is made with spices and a vegetable or fruit as base. Chutney could be finely ground or coarsely ground.It can be in dry form, semi solid or liquid form. It could be hand made using Ammikal or motor and Pestle, or ground in a mixer Jar. My mom use to make chutneys by grinding in Ammikal ,This recipe belongs to my mom, who inspires me  a lot. Since my Dad has a very strong taste bud and loves spicy tasty food. My mom use to cook food to his strict taste buds, Even if she added a pinch of an extra ingredient my dad use to make out, Now i make this chutney at home because it's my husband's and my son's personal favorite ! So now lets get down to the ingredients :)

Ingredients 



1) Tomato - 1 Cup Coarsely Chopped Tomato

2) Onion - 1/2 Cup Coarsely Chopped Onion

3) Garlic - 10 - 12 Cloves of Garlic

4) Ginger - 1 tbsp Chopped Ginger

5) Curry Leaves - 2 tsp 

6) Coriander Leaves - 1/4 Cup chopped Coriander leaves

7) Red Chilly Powder - 1 tbsp ( if you need the chutney to be spicy add 1 and 1/2 tbsp)

8) Salt - 1 tbsp

9) Oil - 4 tbsp refined oil

10) Mustard Seeds - 1/4 tsp

11) Dried red chillies - 2- 3 for seasoning

 Tomato has lots of vitamin A and C which aids vision and immunity.Tomato has high levels of potassium which helps lower Blood pressure and cholesterol levels.Tomato has calcium and vitamin K which aid healthy bones.Onions and Garlic has number of chemicals which reduces infections , helps good cardiac health and reduce cholesterol, fights risks of cancer and is a very good source of anti oxidants.

Ginger has good digestive properties. Curry leaves and Coriander leaves also add value by imparting Iron , phosphorus, Vitamin C.When chutney is accompanied by dosa/idli/rice , you get good amount of carbohydrates ...the energy to keep you rocking all day.
