Paneer Spinach Frankie
Vegetable Frankie is a very easy to carry roll/wrap. A Roti or tortilla made of all purpose flour (maida) is usually prepared and a filling made of vegetable/fruit as base is used as a stuffing. To make the Frankie little less heavy and more healthy i used whole wheat flour to make Roti. For this frankie i used a combination of my greens i had stock of and Paneer.
Ingredients

To make Roti :

1) Whole wheat flour - 1 and half Cup
2) Water - Around half a cup of water to make a dough
3) Salt - as per requirement.



For the Stuffing/Filling

​1) Onion - 1 Cup chopped Onion
2) Tomato - 1/4 Cup chopped tomato
3) Spinach - 1 Cup Chopped Spinach
4) Spring Onion - 1/4 Cup chopped spring Onion
5) Coriander leaves - 2/3 tsp chopped coriander leaves
6) Mint Leaves - 1 tsp
7) Coriander powder - 1tbsp
8) Chilly Powder - 1 tbsp
9) Garam masala - 1/4 tbsp
10) Turmeric powder - a pinch
11) Salt - 1/2 tbsp
12) Lemon juice - juice of half a lemon
13) Vegetable oil - 2-3 tbsp


Method of preparation :

1) To make Roti:
Mix all ingredients and make a dough. Divide the dough in to equal portions and make the Roti's required for making Frankie.

2) To make stuffing/Filling and then how to make a frankie with the filling/stuffing.

Health Benefits

Spinach has a lot of health benefits. It contains good amount of dietary fiber, fights cancer, contains antioxidants and helps reduce blood pressure.
Spring Onions helps reduce cholesterol, aids optimization of blood sugar levels. Paneer has good amounts of calcium and is good for bones and light on stomach.Since this frankie is made of whole wheat flour,
adds lot more health value.




Heat a tbsp of oil in a cooking vessel and add onions and tomato and saute till both are cooked.
Add mentioned amount of red chilly powder, turmeric powder,salt, Garam masala, Coriander powder, Mix all ingredients and cook further for a minute.
Serve it hot
