My Way Green Chilly Rasam
​Rasam is a soup commonly found in south Indian Kitchen , made with tamarind pulp as base. This could be eaten with rice. Rasam is my husband's daily requirement with rice, and hence we make rasam almost every day. We get a lot of recipes for rasam if we search in web, with lentils , with out ...with pepper with out ...with tomatoes..with out ...and many more. However My Rasam is completely inspired by my mom.
My mom use to take all whole spices and grind them in Ammikal and then saute them and add tamarind pulp to it. The first time i made rasam for my husband , some of the ingredients from the recipe my mom use to make were not available with me so i replaced with what was available and made rasam ....and since my husband liked that rasam and insisted me to make it every time the same way , i now almost forgot how my mom use to make rasam :)
Ingredients

1) Tomato - 1/4 cup chopped tomatoes
2) Green Chilly - 5-6 in quantity
3) Garlic - 7 Cloves of garlic
4) Ginger - 1 tsp of chopped ginger
5) Coriander leaves - 4tsp chopped
6) Curry Leaves - 3-4 for seasoning
7) Cumin Seeds - 1/4 tsp
8) Mustard seeds - 1/2 tsp
9) Red Chilly - 2 for seasoning
10) Asafoetida - a pinch
11) Tamarind - A tsp of tamarind is soaked in half a cup of water and extract the juice.
12) Salt - 1tsp ( Add extra if you need more)
13) Lemon - Juice of a half lemon
14) Gingerly Oil - 3 tsp
15) Whole black pepper - 4-5 in quantity
16) Water - 500ml

Health Benefits

The tamarind in the rasam has good nutritional value and health benefits. The tamarind promotes a healthy heart by lowering cholesterol, good source of antioxidants that fight against cancer, helps to digest food, used to treat bile disorders. Black pepper also helps prevent the formation of intestinal gas, promotes urination, and promotes sweating. It is full of manganese, and it also has a good amount of iron and dietary fiber, as well. Tomatoes have excellent anti oxidant properties and so does Lemon. All the other spices when freshly crushed and added adds nutrient value to Rasam.

Heat Oil in a cooking vessel. Once oil is hot add Cumin seeds, mustard seeds, dry red chilly and curry leaves.Once mustard seeds splutter add tomatoes and a pinch of Asafoetida and saute. Now add 1/4 tsp of salt and saute further. saute until tomatoes are cooked.
In a motor and pestle crush Garlic,ginger,coriander leaves, Green Chilly,Black pepper. I crush them in to a coarse form.
Garnish with coriander leaves and serve them hot with Rice, or can drink this as a soup like how my son does :)
