Bhindi Raitha
Raitha originated in India around 19th century.It is a sauce or dip made with Yogurt as base ,with a major ingredient like fruit, Vegetable or pulse. Lady's finger or Bhindi either its stir fried or in Raitha is my husband's favorite. Its very easy to make and yummy dish.
Ingredients :
1) Lady's Finger - 1/2 a cup of chopped lady's finger
2) Onion - 1/2 cup chopped onion
3) yogurt - 1 1/2 cup of yogurt
4) Oil - 3 tbsp of vegetable oil
5) Mustard seeds - 1/4 tsp of mustard seed for seasoning
6) Red Chillies - 2- 3 red Chillies
7) Curry leaves - 1 tsp
8) Coriander leaves - 2 tsp ( chopped)
9) Salt - as per taste

Lady's Finger has probiotics which help in proliferation.Lady's finger helps fight diabetes, acts as laxative,improves bowels and treats gastrointestinal tracts. Yogurt is easier to digest than milk.
Yogurt helps absorption of calcium and vitamins,contains protein and calcium and treats digestive tracts. though onion is not a key ingredient in this dish it adds value as it has cancer fighting properties and helps check cardiovascular issues.
Chop lady's finger in to 1/4th cm thickness, Chop onions finely. we require 1/2 cup of lady's finder and half a cup of chopped onion.
In a cooking utensil , heat 2 tbsp of vegetable oil. Once oil is hot add chopped onion and lady's finger.
Add seasoning to the Raitha. Bhindi Raitha serves best with Plain rice, pulao, or with Roti.
