Puliyogare Mixture
Puliyogare is a traditional south Indian rice preparation made of tamarind and spices. Puliyogare is also called as Pulihora in Andhra Pradesh,Puliyodhara in Tamil Nadu. To prepare this rice primarily Puliyogare paste or mixture is prepared.To this spice mixture rice is added and mixed. Puliyogare mixture is also available commercially however what makes it more interesting is when you make the mixture at home and make Puliyogare rice with home made Puliyogare mixture. Let's get going ! Its simple and easy to make this mixture and once you make , you can store this up to 3-4 months in air tight container and later we can make Puliyogare in a matter of 5 minutes.
Ingredients
1) Urad dal - 1/4 Cup
2) Channa Dal - 1/4 Cup
3) Coriander Seeds - 1/2 Cup
4) Sesame seeds - 1/8 Cup
5) Cumin seeds - 2 tbsp
6) Curry Leaves - 1 strip
7) Dry Red Chilly - 10 -12 in quantity
8) Desiccated Coconut - 1 Cup
9) Tamarind extract - 1/2 Cup
10) Jaggery - 50 gms
11) Salt - as per taste
12) Black pepper - 1 tsp
13) Asafoetida - 1 tsp
14) Peanuts - 1/4 cup
15) Mustard seeds - 1/2 tsp
16) Gingerly Oil - 4tbsp

Pulihora mixture contains jaggery rich in minerals and fiber; Tamarind is rich in calcium, phosphorus and vitamins C and A; Dal gives good amount of protein;spices support immune and digestion.When Puliyogare paste is mixed with rice to make Puliyogare, we get enough carbohydrates to keep our stomach filling.

Dry roast urad and channa dal

Dry roast Coriander seeds, sesame seeds, pepper and cumin seeds.

To make Puliyogare with this mixture, add 2 tsp of this mixture in to 1 cup of rice. You can store this mixture in an air tight container for later use up to 3 months.
