Khandvi - Healthy Low fat Gujarati Snack
Khandvi is a low fat , healthy snack prepared majorly in Gujarat. It's based on Chickpea flour or Besan. This recipe needs a little patience and is little tricky However once you get it right there is no way you can go wrong !! My interest to make this all of a sudden appeared as i saw one of the Culinary pictures posted Aashirvad in Facebook.

The Picture was very tempting, i searched in Google and finally found a recipe
at Sanjeev kapoor's. I tried the recipe twice but something went wrong , i was not able to roll Khandvi. Then paid attention to the recipe again and tried today and let me tell you how happy i was !!! I felt like i invented this dish today :) The taste was savory ,however tasted awesome with Tempering. I would say tempering does it all for this recipe. Different kinds of tempering would be used ( that's what i concluded from my friend Ms Google :) ) I used something which i had handy. It's a definite try by virtue of the fact that it uses very less oil , that too in tempering stage.

Ingredients

For Khandvi

​1) Chickpea Flour - 1/4 Cup
2) Curd - 1/4 Cup
3) Salt - 1/2 tsp
4) Red Chilly Powder - 1/2 tsp
5) Dry Ginger powder and Asafoetida - A pinch
6) Turmeric Powder - 1/4 tsp
7) Water - 1/2 Cup

For the Tempering /Seasoning

1) Oil - 1 tsp
2) Mustard Seeds - 1 tsp
3) Curry Leaves - 7-8 leaves
4) Coriander leaves - 2tbsp chopped leaves
5) Coconut - Grated/Desiccated Coconut 2 tsp

Health Benefits

Khandvi is a highly nutritious food, by virtue of the principal ingredient, namely gram flour, present in it. Gram flour is known to have a number of health benefits like prevention of heart disease, weight loss, fighting of allergies and diabetes control.
Mix Besan, Turmeric powder, Chilly powder, salt, dry ginger powder and Asafoetida powder along with Curd.
This is how we want our Mixture to be , lump free!
In a pan heat oil, add mustard seeds , curry leaves.Once they are fried remove them and pour them over the rolled Khandvi. Sprinkle coconut and garnish with some Coriander leaves. Tempering does it all !! Yummy ready to be snacked :)
