Carrot Chutney - Less Oil Microwave way
Carrots are interesting bunch of roots with appealing lovely orange color.unlike greens which looses its vitamins after cooking carrot gains its nutrient content. Beta carotene a prime vitamin found in carrot when consumed fresh releases only 3% while digestion where as after cooking releases as much as 40%.Interesting isn't it ? from dishes to desserts carrots are favorites in most Indian houses. This time try this Less oil,Microwave cooked Carrot Chutney.
Ingredients
1) Carrot - 1 Cup Coarsely chopped
2) Onion - 1/2 Cup coarsely chopped
3) Coconut - 2 tbsp grated/chopped coconut
4) Green chilly - 6 in number
5) Ginger - 2 tsp chopped
6) Garlic - 7-8 cloves of garlic
7) Coriander leaves - 1/4 cup chopped
8) Salt - as per your taste requirement
9) water - 1/4 cup
10) Oil - 2 tsp or even less.
11) Mustard seeds,few juliants of ginger and red chilly - Just enough to season

In a microwave safe dish take all ingredients from 1 to 7 and microwave in High power mode for 4 minutes.Then add 1/2 tsp of oil and 1/2 tsp of salt and cook it in microwave high for another minute.
Cool the ingredients before grinding
Serve with hot Idly or Dosa.
